One of the most decent people I've ever worked with is a guy named Tim Tate. We worked long, late shifts. The highs included nights when the place was full of wonderful people; we'd pour Champagne and the entire place would sing along to the DJ. The lows included cleaning up puke and other savory tasks (use your imagination!). But the good nights-- which were some of the most fulfilling nights in my career-- were good in part because Tim Tate was backing everything up. And the lows were never that bad because Tim-- a guy with more personality than a short ristretto-- would find a way to make you laugh about it.
I didn't realize it at the time, but all those years ago, he was roasting up an idea for his own project. By night, I knew him as a hard-working restaurant man, and I always admired how he never seemed to get tired. But now, I know his secret: Daytime Tim Tate spent his mornings experimenting with bean roasting, which left him uber-caffeinated to work each night until 3am.
Tim Tate has big dreams, and I'm so happy to shout it from the rooftops that he's started his own coffee roasting company!
Tim has dreamed up Parkside Coffee Roasters, and based himself in Brooklyn. He's micro-roasting for restaurants and home subscriptions, and sometimes, you get comics with your coffee....
